Ingredients

• 1/2 small Chinese Cabbage (wombok), shredded
• 50 g Snowpea Sprouts, trimmed, halved
• 1 large Carrot, peeled, sliced thinly into batons
• 1 Red Capsicum, seeded and thinly sliced
• 1 cup Coriander Leaves
• 1/2 cup Mint Leaves, torn
• 1/2 cup Toasted Peanuts, chopped
• 1/4 cup Pickled Ginger Slices
• 100 g Packet Fried Crunchy Noodles

For Dressing:

• 1 Lime, rind and juice, finely grated
• 1 tbsp Fish Sauce
• 1 Fresh Long Red Chilli, deseeded, finely chopped (optional)
• 2 tsp Coles Brand Brown Sugar
• 1 clove Garlic, crushed

Method

1. Place all salad ingredients in a large bowl.
2. In a jug whisk together all dressing ingredients or place in a clean jar with a lid and shake vigorously.
3. Pour dressing over salad just before serving, toss well to coat.

   TIP

   Other delicious additions to this salad include: shredded snow beans, radish and green onions (shallots).
