These gorgeous little Turkish treats will go down exceptionally well at your next entertaining event.

Ingredients

  • 2 tblsp Olive Oil
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 2 Garlic Cloves, crushed
  • 1 Lemon, juice of
  • 300 g Lamb Backstrap
  • 3 sheets Frozen Shortcrust Pastry, thawed
  • 1 Capsicum, char-grilled, peeled, chopped
  • 1/2 cup Black Olives, sliced
  • 2 tblsp Basil Pesto

Method

  1. In a bowl, combine 1 tablespoon oil with cumin, coriander, garlic and juice. Add lamb, turning to coat, and marinate in fridge for 1-2 hours.
  2. Heat oil in a frying pan over medium, cook lamb 3-5 minutes each side. Set aside, covered.
  3. Using a 6cm cutter, cut 12 rounds from each pastry sheet. Pinch together two sides of each pastry to form a boat.
  4. Slice lamb thinly, then mix with capsicum and olives. Fill each pastry with lamb mixture. Bake 8-10 minutes, until golden and heated through. Serve topped with a little pesto.

TIP

If you prefer, buy char-grilled capsicum from the deli.
