A fantastic option for a family dinner and absolutely, heart-warmingly perfect on a cool evening.

Ingredients

  • 30 g Butter
  • 1 tbsp Olive Oil
  • 1 Leek, trimmed, sliced (see tip)
  • 6 Rindless Bacon Rashers, chopped
  • 1 Sheet Frozen Shortcrust Pastry, thawed
  • 1 Large Tomato, sliced
  • 1/3 cup Grated Tasty Cheese
  • 4-5 Eggs
  • Chopped Parsley, to serve
  • Salad, to serve (optional)

Method

  1. Preheat oven to moderate, 180°C. Line a baking tray with baking paper.
  2. Heat butter and oil in a large frying pan on high. Sauté leek for 1-2 minutes until tender.
  3. Add bacon and cook for 2-3 minutes, until starting to brown.
  4. Place pastry on prepared baking tray. Cut off corners to form a round top with tomato and cheese, leaving a 3cm border. Spread leek mixture over. Fold up edges, and pleat to enclose filling (see tip).
  5. Break eggs carefully on top of pie filling. Bake for 20-25 minutes, until egg is set. Sprinkle with parsley, and serve with salad, if liked.

TIP

It is important to wash leeks thoroughly first. Slit lengthwise and splay open the layers as you hold the leek under cold running water.

Place pastry in a pie dish if you have trouble keeping it in shape.
