Ingredients

  • 2 cups Cranberry Juice
  • 3 tsp Gelatine
  • 2 Egg Yolks
  • 1/3 cup Caster Sugar
  • 1 Vanilla Bean, split, seeds scraped
  • 250 g Mascarpone
  • 300 ml Cream, whipped
  • 2 x 150 g pkts Almond Toscani Biscotti
  • cups Orange Juice
  • 2 Mangoes, thinly sliced
  • 300 ml Cream, whipped, extra
  • 1/4 cup Pistachios, roughly chopped

Method

  1. Place cranberry juice in a small saucepan. Sprinkle the gelatine over and stand for 2 mins, to soften. Warm over low heat, stirring until gelatine has dissolved. Pour into a 12-cup capacity serving bowl, and refrigerate for at least 2 hrs, until set.
  2. When you are ready to assemble the trifle, use an electric mixer to beat egg yolks and sugar until pale and creamy. Add vanilla seeds and mascarpone and beat briefly to combine. Using a large metal spoon or spatula, fold in the whipped cream.
  3. Dip one biscotti at a time into the orange juice to soften slightly, then place on top of the jelly. Work around the outside of the dish first, then fill in the middle (the number of biscotti you need will depend on the size of the bowl).
  4. Spoon the mascarpone mixture over the biscotti, then top with a layer of mango slices. Top with dollops of whipped cream and scatter with pistachios.
