Salted Caramel Chocolate Pecan Fudge

This rich fudge is topped with a gooey layer of salted caramel. Keep it well chilled or if you prefer a gooey caramel leave it out and the caramel will run down the fudge like a decadent dessert.

Ingredients

  • 395 g can Condensed Milk
  • 2x200 g blocks Coles Brand Dark Cooking Chocolate, chopped
  • 125 g Butter, chopped
  • 1/2 cup Chopped Pecans (preferably lightly toasted)
Salted Caramel Topping
  • 1 cup Caster Sugar
  • 1/3 cup Water
  • 1/4 cup Cream
  • 60 g Butter
  • 1/4-1/2 tsp Sea Salt Flakes

Method

  1. Grease and line a 20cm square pan.
  2. Combine the condensed milk, chocolate and butter in a medium saucepan. Melt over low heat, stirring until smooth. Cook for 1-2 minutes or until just thickened. Remove and stir in the pecans. Pour into the pan and chill for 2 hours, or until firm to touch and set.
  3. For the caramel topping: Place the sugar and water in a heavy based frying pan. Cook over medium-high heat for 8-10 minutes, or until a golden amber colour. Whisk in the cream and butter. The mixture will be rapidly bubbling. Cook for 1 minute until thick. Remove to a bowl and stand until cool. Spread over chocolate fudge base. Sprinkle with salt. Refrigerate until cold and set. Trim edges and cut into 6x6 squares. Keep well chilled. If serving on a hot day, freeze for a short time before serving.
