Ingredients

  • 2 tbsp Coles Brand Olive Oil, plus more to coat the baking dish
  • 1/2x500 g Coles Brand Large Shell Pasta
  • 1 Medium Brown Onion, cut into medium dice
  • 2 Stalks Celery, thinly sliced
  • 1/4 tsp Coles Brand Ground Nutmeg
  • 1/4 tsp Coles Brand Dried Chilli Flakes
  • 2 tbsp Coles Brand Italian Red Wine Vinegar
  • 3 tbsp Coles Brand Plain Flour
  • 2 cups Coles Brand Full-cream Milk
  • 1 cup Water
  • 2 x 185 g cans Coles Brand Tuna Chunks in Springwater, water reserved
  • 3 cups Loosely Packed Fresh Baby Spinach Leaves (75g)
  • 1 cup Mil Lel Shredded Parmesan Cheese
  • 1/3 cup Coles Smart Buy Dried Breadcrumbs

Method

  1. Preheat the oven to 180°C (160°C fan forced). Lightly grease a 33x22x5-cm baking dish with oil.
  2. Bring a large saucepan of salted water to a boil over high heat. Add the shells and cook, stirring often to ensure they don’t stick together, for about 8 minutes, or until tender but still firm to the bite. Drain.
  3. Meanwhile, heat a large heavy saucepan over medium heat. Add the 2 tbsp of oil and heat for 1 minute. Add the onion and celery and cook for about 5 minutes, or until they soften. Stir in the nutmeg and chilli flakes. Add the vinegar and cook, stirring, for about 30 seconds, or until it has nearly evaporated.
  4. Slowly stir in the flour and cook, stirring constantly, for about 1 minute, or until it coats the vegetables. Slowly add the milk and water while whisking constantly so no lumps form. Season the sauce to taste with salt and pepper and bring to a simmer over medium-high heat. Reduce the heat to medium-low and simmer very gently for about 10 minutes, or until the sauce thickens slightly.
  5. Remove the pan from the heat, and stir the tuna and its juices into the sauce. Stir in the pasta, spinach, and 1/2 cup of the Parmesan cheese. Season to taste with salt and pepper. Transfer the mixture to the prepared baking dish.
  6. In a small bowl, mix together the breadcrumbs and remaining 1/2 cup Parmesan cheese. Sprinkle over the pasta mixture.
  7. Bake for about 25 minutes, or until bubbly all over and very pale golden on top. Stand at room temperature for 5 minutes before serving.
