Ingredients

  • 2 tbsp Olive Oil
  • 1 small Yellow Capsicum (150g), chopped finely
  • 1 small Red Onion (100g), chopped finely
  • 1 clove Garlic, crushed
  • 1 tsp Ground Cumin
  • 1/2 tsp Sweet Paprika
  • 400 g Beef Mince
  • 2 tbsp Tomato Paste
  • 2 tbsp Water
  • 130 g can Kidney Beans, rinsed, drained
  • 1 tbsp Coarsely Chopped Oregano
  • 2 cups (500ml) Bottled Tomato Pasta Sauce
  • 1 cup (250ml) Water, extra
  • 10 x 15 cm Corn or Flour Tortillas
  • 1 cup (120g) Coarsely Grated Reduced-fat Cheddar Cheese
  • 1 tbsp Finely Chopped Fresh Flat-leaf Parsley
  • Sour Cream, Shredded Lettuce & Chopped Tomatoes, to serve, optional

Method

  1. Heat half the oil in a large frying pan and cook capsicum, half the onion and half the garlic, stirring, until vegetables soften. Add spices and cook, stirring, until fragrant. Add mince and cook, stirring, until changed in colour. Stir in paste and the 2 tablespoons water and simmer, stirring, 1 minute. Place filling mixture in a large heatproof bowl, then stir in beans and oregano.
  2. Heat remaining oil in same pan and cook remaining onion and garlic, stirring, until onion softens. Add pasta sauce and the extra water, then bring to a boil. Reduce heat and simmer, uncovered, 5 minutes.
  3. Preheat oven to 180°C/160°C fan-forced. Oil a shallow square 3-litre (12-cup) ovenproof dish. Spread 1/2 cup pasta sauce mixture in dish.
  4. Warm tortillas according to package instructions. Dip one side of tortillas, one at a time, in pasta sauce mixture, then place on a board. Divide filling among tortillas, placing mixture on a tortilla’s edge, then rolling the tortilla to enclose the filling.
  5. Place enchiladas, seam-side down, snugly in a single layer, in dish. Spread remaining pasta sauce mixture over enchiladas and sprinkle with cheese. Cook, uncovered, 15 minutes or until enchiladas are hot.
  6. Serve enchiladas sprinkled with parsley and, if you like, separate small bowls of sour cream, shredded lettuce and chopped tomatoes.
