Ingredients

  • 3 cups self-raising flour
  • 1/4 cup brown sugar
  • 50 g butter, chopped
  • 2 ripe bananas, mashed
  • 1/2 cup milk
  • 1/3 cup walnuts, chopped
  • butter and golden syrup, to serve

Method

  1. Light a campfire and let it burn down until it’s just red-hot coals. Nestle a camp oven into the coals, and use a shovel to place some on the lid, to preheat the oven.
  2. Combine flour and sugar in a bowl, and add butter. Use your fingertips to rub in until combined. Make a well in the centre.
  3. Add mashed banana and milk, and, using a non-serrated knife, mix to a soft dough. Gather dough together with your hands (it will be soft and sticky), and place onto a large piece of oiled foil. Pat out to a 20cm round, and press the walnuts into the top. Use a large knife to deeply score the dough into 8 portions.
  4. Use the foil to carefully lower damper into the camp oven, and replace the lid. Cook for about 40 mins, or until golden brown.
  5. Using tongs, lift the foil holding the damper out of the camp oven and place onto a cutting board. Cool slightly. Serve spread with butter and drizzled with golden syrup.
